| The Story: |
The Sauvignon Blanc and Semillon fruit was harvested in the cool of the night when fruit flavours were vibrant and varietal. Fermentation of the free run juice was in stainless steel tanks with several blending trials undertaken to develop the best regional blend possible, that it is. Also, both parcels of wine came from Windowrie Homestead block from a very low yielding vintage of 65% due to a late frost, with the vines recovering well from the frost, thus adding intensity and flavour to the wines due to the low yield of fruit on the vines.
