Peter Scuddamore-Smith MW rates Windowrie as one of the top 10 wineries in NSW 2010. With fruit sourced from a premium Hilltops vineyard in NSW, Windowrie's The Mill 2010 Hilltop Cab Merlot is a blend of 85% Cabernet and 15% Merlot. It's an excellent example of the harmony that these two varieties can achieve when blended together. It displays a fine balance between blackberry fruit, earthy characters and vanillin oak. It's an excellent food wine and medium term cellaring will further enhance these characteristics. Wonderful drinking!

Foods: Rack of lamb, roast beef, Hare, pasta with light/rich sauces.
Oak: French and American Oak.
Colour: Dark brick red
Palate: Blackberry fruits, earthy characters and vanillin oak.
The Story: The Cabernet in this wine is sourced from one of the premium Hilltop vineyards. Vines were thinned during the growing season from a severe hail storm which resulted in meagre yields and consequently high flavour. The fruit from this vineyard had one of the most elegant flavour profiles displayed by Cabernet from Hilltops for a number of years. The Cabernet was picked with classic Bordeaux cassis, mint characters and chalk tannins. The Merlot was selected from the Troopers vineyard which has traditionally produced their best Merlot.
