| The Story: Made by Ben Heide and James Mungall of Patritti wines fame. With grapes harvested in March 2006 from premium vineyards in the Southern Fleurieu region, and following gentle pressing, the wine was then racked to new French Oak Puncheons. Using multiple different yeast strains to build complexity and palate weight in the finished wine. 50% of the wine was then given Malolactic fermentation to further develop complexity and softness. The wine was then matured for six months on lees in barrels before bottling, and was then given extended bottle aging prior to release. On the nose, aromas of figs with a hint of gentle oak, leading to intense and complex flavours of stonefruit, peach and fig on the palate. |
