James Halliday 4.5 star rated winery 2012. We love the pink colour of this wine. Strawberries and cream on the nose which leads onto the palate. The acid is crisp, adding complexity, zest, it is fresh with a lively effervescence and a rich middle palate which shows the great depth of this sparkling wine. Fantastic!

The Story: The grapes for this wine were sourced from the Edwards familys Serendipity vineyard at Birdwood, Adelaide Hills. The grapes were picked in late February, and the free run juice was cold fermented, then left on it is lees with weekly stirring to add complexity. Prior to secondary fermentation, a portion of the blend underwent partial malolactic fermentation adding finesse, with a small portion aged in old oak adding further complexity. It is a lovely deep Rosé style of sparkling Brut.
